Crunchy Puff Pastry Palmiers Cookie

Ingredients
• 750g Puff Pastry
• 250g Sugar
• 6g – 8g Cinnamon
The instructions
◇Step 1 – Making The Palmiers
- In a bowl, mix sugar and cinnamon
- Sprinkle the cinnamon sugar on the counter and on your puff pastry
- Roll the dough in a 15cm x 60cm rectangle
- Keep adding sugar multiple times on and under the dough while rolling it out
- Trim the edges to get a perfect rectangle
- Fold the puff pastry into 6 equal parts
- Take the extremities and fold them in half to the middle
- Take your new extremities and fold them until they touch at the center
- Use your rolling pin to press the middle down
- Then fold in half
◇Step 2 – Cut & Bake
- Preheat the oven to 350 F°
- Meanwhile cut the folded puff pastry into 1,5 cm
- Place about 5 at a time on a baking sheet making sure they have enough space to puff up
- Open them up in a V shape
- Bake for 15 minutes
- Flip them and bake for another 15-20minutes
