Crunchy Puff Pastry Palmiers Cookie

Ingredients

• 750g Puff Pastry

• 250g Sugar

• 6g – 8g Cinnamon

The instructions

◇Step 1 – Making The Palmiers

  1. In a bowl, mix sugar and cinnamon
  2. Sprinkle the cinnamon sugar on the counter and on your puff pastry
  3. Roll the dough in a 15cm x 60cm rectangle
  4. Keep adding sugar multiple times on and under the dough while rolling it out
  5. Trim the edges to get a perfect rectangle
  6. Fold the puff pastry into 6 equal parts
  7. Take the extremities and fold them in half to the middle
  8. Take your new extremities and fold them until they touch at the center
  9. Use your rolling pin to press the middle down 
  10. Then fold in half

◇Step 2 – Cut & Bake

  1. Preheat the oven to 350 F°
  2. Meanwhile cut the folded puff pastry into 1,5 cm
  3. Place about 5 at a time on a baking sheet making sure they have enough space to puff up
  4. Open them up in a V shape 
  5. Bake for 15 minutes
  6. Flip them and bake for another 15-20minutes
  7. Enjoy
