Extra Sour Lime Jellies

Ingredients:
- 920 grams (32.5 oz) of limes
- 180 grams (6 oz) of lemons
- 25 grams (1 oz) of gelatine
- 140-180 grams (5-6 oz) of sugar
- 1 gram (1/2 tsp) of vanillin
- green food colouring (optional)
Cooking method:
- Remove the zest from 2 limes. Then cut all the limes and lemons in half and squeeze the juice out of them (you should have about 400 ml or 1 & 2/3 cup).
- Pour half of the juice into a saucepan. Add the zest, vanilla and sugar (140 to 180 grams, depending on how sweet you want your jellies).
- Add the gelatin to the second half of the juice. Stir and leave it for 15 to 30 minutes.
- Put the saucepan with the first part of the juice on the fire and bring to a boil. Once boiling, simmer for 2-3 minutes, and then remove from the heat.
- Combine both parts of the juice and mix well. Add the food coloring if desired. Then take a mold, cover it with clingfilm and pour the juice into it through a sieve. Put it in the fridge until completely solidified (I recommend leaving it for 1-2 days).
- When the jelly sets, take it out of the form and cut into cubes. Dessert is ready, enjoy! Be sure to store it in the fridge.
