IKEA Swedish Almond Cake

Ingredients

  • 4 egg whites 
  • 1/2 cup sugar
  • 1/4 tsp salt
  • 1/4 tsp cream of tartar 
  • 1 1/2 cups almonds 
  • 4 egg yolks 
  • 1/3 cup sugar 
  • 1/2 cup whipping cream 
  • 1 tsp vanilla extract 
  • 1/2 cup butter 1/2 cup almond flakes 

Recipe

  1. Grind almonds until you get almond flour. 
  2. Whisk egg whites. Add salt and cream of tartar. 
  3. Gradually add sugar and whisk until stiff peak. 
  4. Add almond flour into batches and fold with spatula. 
  5. Divide the batter into two prepared baking pans. Bake @325F for 20-25 minutes. 
  6. Beat egg yolks in another bowl . Add sugar and mix until well blended. 
  7. Add hot cream and vanilla extract. Mix well. Transfer into a saucepan and cook until it gets thick. Cover the custard with cling wrap and freeze for half an hour. 
  8. Beat butter until smooth. Add cold custard and mix until you get a fluffy frosting. 
  9. Apply frosting on cool cake. Layer on another slice of cake. Repeat with another layer of frosting and spread all over it. 
  10. Roast almond flakes on medium heat until golden. Coat the cake with toasted almonds. 
  11. Freeze for half an hour before serving.
