IKEA Swedish Almond Cake

Ingredients
- 4 egg whites
- 1/2 cup sugar
- 1/4 tsp salt
- 1/4 tsp cream of tartar
- 1 1/2 cups almonds
- 4 egg yolks
- 1/3 cup sugar
- 1/2 cup whipping cream
- 1 tsp vanilla extract
- 1/2 cup butter 1/2 cup almond flakes
Recipe
- Grind almonds until you get almond flour.
- Whisk egg whites. Add salt and cream of tartar.
- Gradually add sugar and whisk until stiff peak.
- Add almond flour into batches and fold with spatula.
- Divide the batter into two prepared baking pans. Bake @325F for 20-25 minutes.
- Beat egg yolks in another bowl . Add sugar and mix until well blended.
- Add hot cream and vanilla extract. Mix well. Transfer into a saucepan and cook until it gets thick. Cover the custard with cling wrap and freeze for half an hour.
- Beat butter until smooth. Add cold custard and mix until you get a fluffy frosting.
- Apply frosting on cool cake. Layer on another slice of cake. Repeat with another layer of frosting and spread all over it.
- Roast almond flakes on medium heat until golden. Coat the cake with toasted almonds.
- Freeze for half an hour before serving.
