White Chocolate Cranberry Cookies

INGREDIENTS

  • ½ cup butter, softened to room temperature
  • ⅓ cup granulated sugar
  • ½ cup light brown sugar, packed
  • 1 large egg, at room temperature
  • 2 teaspoons vanilla extract
  • 1-½ cups all purpose flour
  • 1 Tablespoon cornstarch
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup white chocolate chips
  • 1 cup sweetened dried cranberries (like Craisins)

INSTRUCTIONS

  1. Preheat oven to 350°F.
  2. Using a stand mixer or handheld electric mixer, cream together the butter and both sugars.
  3. Then, add the egg and vanilla extract and mix again.
  4. In a separate bowl, stir together the dry ingredients of flour, cornstarch, baking soda, and salt.
  5. With the mixer turning on low, slowly add the dry ingredients to the wet ingredients until well combined.
  6. Finally, stir in the white chocolate and cranberries.
  7. Scoop out heaping teaspoonfuls of cookie dough and place on a lined baking sheet (I like to use silicone baking mats).
  8. Bake on the middle rack of the oven at 350℉ for 10-12 minutes or until light golden brown.
  9. Place the baked cookies on a cooling rack for a few minutes and then enjoy!
